In-N-Out Animal Style Focaccia
Description
This Animal Style Focaccia is inspired by the iconic burger, transformed into a crispy, cheesy loaf. The dough is stuffed with crispy fries, topped with more fries and sharp cheddar, then finished with seasoned beef, caramelized onions, melted American cheese, and a tangy homemade animal sauce. It has all the flavors of your favorite drive-thru order packed into a slice of focaccia with a crunchy potato topping and a soft, airy crumb.

Instructions

Melt the butter in a skillet over medium-low heat. Add the onions and a pinch of salt. Cook, stirring occasionally, until deeply golden and caramelized, about 30–40 minutes. Set aside.

In a bowl, combine the ground beef, mustard, salt, and pepper. Cook in a skillet over medium-high heat, breaking it into small crumbles until browned and fully cooked. Set aside.

In a small bowl, whisk together the mayonnaise, ketchup, mustard, vinegar, sugar, and relish until smooth. Refrigerate until ready to use.

Cook 75 g of the frozen fries according to package directions until crispy. Allow them to cool slightly.

Stretch the overnight focaccia dough into a rectangle. Scatter the cooked fries over the dough, then fold and seal the dough around the fries. Transfer to an oiled 9 × 13-inch (23 × 33 cm) baking pan.

Cover and proof for 2 hours, or until the dough is puffy and relaxed.

Preheat the oven to 220°C (425°F).

Drizzle the dough with olive oil and dimple the surface. Press the cubed cheddar into the dimples. Scatter the remaining 75 g frozen uncooked fries over the top and gently press them into the dough so they adhere during baking.

Bake for 20 minutes, or until the focaccia is golden brown and the fries are lightly browned.

Remove from the oven and immediately top with the American cheese, cooked beef, caramelized onions, and a generous drizzle of animal sauce.

Broil for about 3 minutes, or until the cheese is melted and bubbly.

Let cool for 5–10 minutes before slicing. Finish with additional animal sauce and serve warm.
